I want to backlight a shelf-edge label strip, so I was thinking of using some kind of surface mount aluminium channel - this sort of thing:

It needs to be viewable from close to (say 30cm) without getting your eyeballs boiled, so I was planning to run the strip quite dim. Is that likely to cause a problem of uneven light, i.e. each LED being visible?

I guess the size of the aluminum profile is similar as W16mm*H6mm. For such projects, first thing you need to make sure that it will be dotless since it is only 6mm height aluminum profile. So 240-300leds/m might be ok. Eiether to be SMD 2216 chips or COB chips might meet your demand with 2 rows of 4-5mm strip lihght. Secondly, you have to control the total lumen of the strip light, which is mainly by the watt. So my recommendation is as below:
2 rows of 4-5mm SMD 2216 LED strip light with 240-300leds/m 4.8-6W/M
2 rows of COB LED strip light with 380-500 leds/m 4.8-6W/M
