use small electronics ones for small wires (like up to 1mm)

or have a look in rs or cpc shop, there is plenty of variants, if you get a quality ones and dont abuse them then they will last,

for bigger wires use your standard sparkys pliers or a knife.

If you'resat for hours in front of panels try one of these thermal strippers. The PTS-50 Patco Inc wire strippers, thermal wire stripper, wire stripper cutter, wire cutter, cable stripper, coaxial cable stripper, wire stripping, cable stripping tool
We use something similar for panel building. If I'm working on site I carry 5 of these and have them all set for different wire sizes between 0.25 and 2.5mm.

As an update I bought a pair of Channelock wirestrippers to try out (£12.00)
as a basic no frills set for travelling abroad , the yanks use this style a lot to the extent where they'll carry 3 models on a toolbelt for different cable types, but I've never seen anyone use them here before .

So after some use I would say they aren't bad for panel work but because they are so sharp it's easy to cut through a few strands if you just close the selected hole on the wire and pull so I've adapted my technique by just using it to nip the insulation and using the needle nose pliers to grip and pull of the insulation which works perfectly with no broken strands, my only concern really is they're not forged but stamped pressings , but so far so good!

You will probably all think I am mad but i use these for pretty much everything!

I can strip anything with them from CAT5, Flex, Singles or pretty much anything else I come accross.
Just gently squeeze, twist and pull.
I have never tried doing a 0.4 as its not a size I come accross but I can do 0.75 with ease.
 
Well you won't have to worry about breaking them on small wires!
No the whole purpose of the thread was because I was looking for something simple/reliable to take overseas as this job entails a lot of travel and I didn't want anything too heavy/unreliable etc because of weight restrictions also the company want us to use purpose made strippers as there was an expensive site visit once where wires had failed due to being stripped with snips/cutters etc.
 
I got given a pair strippers from weidmuller, stripax I think there called.

Best I've ever used. Most jobs I just use my snips, but for panel building these are just so much faster. I wouldn't pay for them though, last time I checked they were circa £70
 
I did try them and yes very good but I wasn't about to spend that much for them to get pinched by a foreigner!
Having said that the pair I did get was considerably less than I thought I'd be paying and are very good for the money! They were a trial really before I bought a more expensive make but like I said probably as good as!

Absolutely correct they hold water, shrouds are totally unnecessary. 20s is 24mm spanner, 20 large is 30mm spanner.
