I really don't know why these switch panels are fitted, usually in new builds. They are so unnecessary and not required by any regs. I would be looking at getting rid of it myself.

It is not unusal for toasters to trip RCDs. A bit of curly toast touches the element and it trips. On loss of power the toast pops up removing the problem and further testing shows it to not be faulty.
In many countries in Europe light fittings plug in to a ceiling socket (called a GTL in France, something else in Sweden). See your second picture. Your new light fitting should have come with the appropriate plug.
