Hi,
Our kitchen has 6 ceiling lights all controlled by any of three switches.
One of the lights is above our breakfast bar and I want to change a nearby switch to control just that light only while leaving the other two switches still switching all six lights.
Is this a simple re-wiring job?

No not a simple job, maybe for an Electrician, but a DIYer a nightmare would ensue.
Lots of building fabric would be damaged walls, bedroom floors and ceiling maybe, depending on how it was / is wired.
 
one of the staff members that live near you could pm him.
you could ask him for advise .
 
If you Know what you are doing its quite straightforward and could involve a bit of mess depending on what your walls are made of. The fact you ask suggests you'd be better off from a safety perspective and time one of getting a local electrician in to do it.
