Does your Declared Net Capacity appear on your FIT contract?

What happens if your electricity generation exceeds your DCN are you still payed for the amount you generate or is it capped as soon as you reach your DCN?

DNC has nothing to do with how much FiTs you are paid (although it possibly should).

The Total Installed Capacity (TIC) of an installation is what determines what tariff band you fall into.

If you change your TIC by adding an extension to an existing installation then the new part is paid separately from the original part, both in terms of the rate paid and the 25 year duration. If you do change your TIC then your FiTs contract terms require you to notify your elec supplier of the fact.

If your meter readings fall way outside the figures that are expected for your notified TIC then you could expect a visit from someone who will want to find out why.
