would putting 8 50w gu10's on a 400w dimmer be asking for trouble?

Most of the time manufactures have a lower figure on the max load for the dimmer when it's used with mains GU10 lamps, you may only find it's rated for a maximum of 300W when GU10's are used this is just a guess as every manufacturer is different, it should be on the instructions anyway.

rule of thumb for dimmers and Halogen lamps, derate dimmer by 25%

That'll be buzzing like a bumble bee lol and prob wont last long. Screwfix sell a dimmer rated higher than 400W i think. HTH
