Got a Manrose ELV Humidistat and promptly read the instructions (as you do).

Control box should be installed >2m from shower/bath, out of reach of anyone in bath/shower. Its not as if someone can open it up and fiddle with it whilst in the shower as you need a screwdriver to open the box to access the controls!

BS7671 allows 600mm for that and the shower room isn't big enough to site 2m away!

Tempted to install it anyway as far away as possible (about 1.1m from shower).
 
TBH, sounds to me like you've made a hard time for yourself! Why not just use an ordinary 230V humidifan (perfectly fine in zone 1) and not have the hassle of the transformer??

Position of fan is within the shower cubicle and because of the ceiling height fan is around shoulder height, wouldn't fancy a 230V right next to the shower head and I don't think IPx4 will be enough!

Ah! I see the problem! Fair enough, then. In which case just get the thing as far away as you can - you've already demonstrated good design practice by considering the problem and trying to solve it as best the situation will allow for.
