Evening peeps so today I started fitting my heated seat matts to my st150 seats. I’ve taken my power from fuse box with a fuse splice I’ve used the electric window one which has a 30amp rated fuse I need two feeds for the each heated seat is it ok to split that one power connection to feed both seats or will it draw too much current don’t want a bonfire ?
Current Draw: 3 Amps on Low Heat Setting and 5 Amps on High Setting per Seat

I did make the assumption that ST150 seats were in a ST150!
Fuse 215 is intended for heated seats in an 04 Transit. It's 20A and is also for the heated front screen.
Seats don't draw 3A and 5A at the same time - it's either/or, so max draw is 10A.

Hi buddy I’ve not got power on that at the fuse box as I don’t have heated screen hence why I have used said fuse will it be ok I have 27amp rated cable running from the fuse splice that I want to run both my heated seat kits will it be ok like that ?
 
I don't know how much Ford fit as standard and how much is added only when an option is fitted, so I can't say why fuse 215 isn't powered.
It'll be fine taking power from the window fuse, but it would be a good idea to fuse it down a bit for the seats, with a 10A inline fuse as well.
