*I'm still researching but any points in the right direction will help greatly.

I have a project using three

Ballast: 120–277v AC 50/60Hz 2 Lamp GPH843, G36T8 or PLL36w​

Running two UVC lamps each.
Surelite™ Ballast - 10-1180 | BuyUltraviolet - https://www.buyultraviolet.com/ballast-120-277v-50/60hz-2-lamp-10-1180

I need power supplies to accommodate each ballast efficiently.
I also need a lid cutoff switch for the circuit and a master power button.

1) What would be my best option for US power adapters.
2) Where can I find and purchase good DIY electrical components suited for these needs (cutoff, master power button, power adapter)?
3) Will any acrylic plexiglass of reasonable thickness protect from UVC contact?

The ballast says it's compatible with 50/60Hz so it should work on your US power without an adaptor. If you're in doubt maybe just message the seller and ask.

If you're in the US then I'd suggest Digi-Key for components.

Contact with UVC should be prevented by using glass, not plexiglass.
