I'm doing a P.I.R on a large premises (a pub) consisting of three or four sub DBs of which there are no labelling of circuits or diagrams. The installation is about 30 years old. How would I approach the tests and documentation. Any advice would be appreciated. Thanks.
get someone who knows the building well to show you round and spend time on a visual inspection then its a case of picking them off one circuit at a time,

Cripes, that's not a large installation! Try testing a museum of with an installation in parts at around 80 years old, with 350 boards and no information on most of them!!
It's simple to find circuits, get all the lights on, and either switch a circuit off and find what doesn't work, or switch everything off and leave one on and find out what does still have power... It's long and laborious, but it's the only way to do it. If you can't find it pretty quickly, around 15 mins, mark down as not found for the time being and move on to the next one. You'd be surprised how as you explore the place you'll find the ones you couldn't at first.
