Asked to quote on a new kitchen thats been fitted. Existing is connected to house ring etc.
My idea is to disconnect the kitchen from the existing ring and supply a new circuit for the kitchen.

The following will be in the ktc

Around 6/7 double socket outlets
1x extractor
1x Fridge
1x Hob (rating not know)
1x Oven (rating not know)
1x Washing Machine

Going to be updating the CU and bonding aswell as the old is re-wireable fuse etc

My thoughts were to run a ring that will do the sockets outlets, extractor, washing machine. Put a 6mm for the Hob and maybe a 4mm for the oven in case its higher than i thought?
How about the fridge would i be best off putting a seperate RCBO? the cable will be PVC T+E burried in the plaster. Would you put the oven on its own RCBO also?

Yes to both, I would however put in a 6mm for the oven as you will be using 6mm for the hob anyway, that way if a double oven suddenly appears there won't be any egg on your face.

If you really want to take it to the nth degree maybe also have the lighting on its own circuit (depending on size of kitchen and downlight requirements), especially if under cupboard lighting is to be considered.

Is the fridge just a fridge or is it a freezer? If it is a freezer there is a strong argument for it to have its own circuit either not on the rcds or on an rcbo. Personally I would just put an ordinary refridgerator on the ring.
The hob and oven can both go on the same circuit if they are both within 2 metres of the isolator. If you do run them separately even with the double oven scenario i would think your 4mm cable will be more than enough taking into account diversity, unless it is a particularly derating method of install.
