My kitchen sink has a 42 in wide cabinet over it. I'd like to install a light on the under-side of the cabinet to light the sink area below. An electrician installed a switched receptacle inside the cabinet some time ago in anticipation of the eventual installation of a light. I'd like to do that now.

I could easily install a pancake box on the underside of the cabinet for a fixture. The electrician had mentioned possibly running a wire (stranded?) with a plug inside the cabinet leading to the receptacle. Is this OK to do?

That's an easy option as DIY. fit a plug on a length of flex and plud it in. Clip flex to inside of cupboard.

Yes it can be done. They make factory plugs anywhere from 16 to # 6, my advice to you is go to Lowe’s or Home Depot and purchase a # 14 cable and use that for you light
