Hi, it's a long shot but here goes:
A client of mine has a pizza oven in his pub and the thermostat blew on it. He bought a new one and tried to fit himself, but he disconnected the two wires connected to the old one and forgot which way to put them back when he'd fitted the new stat. A simple problem you'd have thought? Switch them round - it's a 50/50 shot, yes?
Not this guy. He disconnected ALL the wiring in the side panel of the oven and then tried to reconnect them, and got it hopelessly wrong. Then he called me.
"Do you have the manual that came with the oven?" I asked him. "Nope, threw it away with the packaging," he replied.
I'm now left with power getting to the front switches (two control switches for either side of the oven, and a red mains switch), but nothing after that. It's dead. In the side panel there is have an inline fuse, and step down transformer (230v to 12v), the thermostat, and the LED front control panel to connect, and half a dozen loose black & blue wires with either spade connectors or male pin connectors on them. The pins connect to the transformer and the LED panel, the spades connect to the inline fuse and the stat. But I've no wiring schematic to follow to connect them correctly.
The oven is a Cuppone Pizza Mondo G9-33, but I've had no success finding a downloadable wiring schematic for it.
As I said, it's a long shot but does anyone have any experience of industrial pizza ovens, or even better - a wiring schem for one.

Probably very unlikely that the manual included a wiring diagram, manufacturers of appliances are usually a bit mean when it comes to this. Do you know what make the thermostat is? You might have more luck to find some information about it on the net. It must switch a contactor which energizes the heaters. This you can measure out.
 
Or, do you have access to the rear of the oven? If you are lucky ther is a service schematic on thi inside, like on some domestic ovens.
 
yes, all the ones I have done have been contactor controlled, no led panels though just manual switches , stats and function lights. He has probably goosed the control board.
 
have you managed to get very far with this?
the led panel is possibly just a digital temperature display?
i work with commercial catering equipment i maybe able to help
 
What is the transformer for?
You should be able to use a multimeter on the thermostat to work out what is what. How many pins are there? Forget about the display for now. The line will go to the in-line fuse then the power switch then split into the separate switches then to each thermostat. out out of thermostat would go to heating elements. Neutral will connect to both elements and the thermostat.
 
I do not know if this will help since the oven is old but Linda Lewis kitchens supply Cuppone ovens and they also have instructions downloads for their new ovens, if Cuppone have kept to the same electrical plan then there are electrical drawings in the instructions, that you may be able to apply to the older ovens or at least have some idea how they expect them to work.

Top chap, Richard, the instructions contained the circuitry (not in the tech specs which were also downloadable lol), and although slightly modified it's pretty much the same as what I found on the older model. Thanks for that, much appreciated.

I just don't know why these unexperienced person wants to do all the repairings. One of my friend did all the mess up and call me in the end. I just said him one thing throw the oven outside and don;t do any thing with new one
