See when rewiring, if there’s an old conduit system in the property. Do you use that to wire and if so do you use the old box that there or do you use a new box?

If it is fit for continued use then yes. If the back boxes are metal and fit for current use then yes also. Some of the conduit systems fitted years ago are 100x better than the work some people do today.

Depends on the condition and if I can safely get new cables in neatly without chaffing

Is is an entire conduit system or is it just the drops to sockets and switches?
Not seen it often in houses {assuming this is domestic}, have seen it in blocks of apartments quite a bit, it's a complete ball ache as it's unlikely a rewire won't be having extra points added.
