I am trying to set up a temp power pole for new construction home. I have everything pretty much laid out, but started questioning the connection from the meter to the load center. I have a 125 amp meter socket and a 70 amp square d main lug load center with 20amp breaker to power gfci receptacle. My 70 amp panel will only accept #3 wire. With 1/0 wire feeding into meter, can I use #3 coming out into the load center? Thank you for taking time to help.

As far as a temporary power pole all you are required is # 6 wire and since your panel is main lug only then you don’t have anyway to cut the power off to the main panel. The only way you can use the panel is to buy a 60 amp double pole breaker with a tie down kit to make it legal. Probably your best bet is to get a panel with a main breaker and don’t forget your ground rod.
