currently doing transformers
and has anyone got a chart/method
working out the turns ratio and current on each side

you have actually answered your own question. Turns ratio.

Number of turns in Number of turns out Vp/Np = Vs/Ns. You will need to manipulate the equation to meet youe specific requirements.

ie. Ns= Np x Vs
Vp
 
Single phase is straight forward! Ratios are constant.
Three phase you need to take into consideration the transformer IE:
DELTA : DELTA
DELTA: STAR
STAR : DELTA.......ETC ETC.
Line and phase values differ. Ratios differ.

example:
Delta secondary.....Line value = Phase value.
Star secondary......Line value = phase value x root3.

Thats why I asked.
