I haven't installed it, don't worry.

I bougt this ceiling light that came with a metal housing and no ceiling rose. The only thing in there was this plastic junction box for the L/N wires.

Means I'll have to use some Wago connectors to make up for the ceiling rose. But what about ground?

Despite having a metal housing, fittings can still be 'double insulated' meaning no earth connection required.
There may be earth conductors in the ceiling rose that should be maintained and connected together but not to the light fitting itself.
If double insulated there should a symbol 'square within a square' to indicate its status (Class 2 being double insulated)
 
The terminal block shown with L & N is in a white plastic enclosure which provides the double insulation. You would have to do the same with any further connections within the metal enclosure or if taken above ceiling level as per #5 (ie wago plus enclosure)
 
Totally non compliant in the YouTube, but the new fitting in that is not double insulated. That would have been compliant if the Wagos had been tucked into the base of the lamp, where there appears to be plenty of room.
