Did the plasterer put a PVA / water coat on the wall before plastering? This helps the new plaster stick to the old.

Personally, I would give it a C2 because the customer could be cooking pasta one day, accidently spill the water over the cooker isolator and could cause it to develop a fault. Also steam from cooking won't do the isolator any good. Not to mention the heat from the hob.

Without a continuity tester, I wouldn't even attempt to wire the light as you could wire it incorrect and cause a short circuit. Either call a electrician out to look at it, or get a continuity tester.

Honestly don't know if you can use any sets of pairs. They are twisted to reduce interference and that would be the only issue I could think of. So long as you use pairs, I don't see an issue, just make sure you use a network tester because if any of the pairs are not kept as pairs, you can get...
