Buy JCC V50 down lights. If you don’t like cool white then just switch them to warm.

Daylight for me...I like to see what I'm cooking!
Oddly, that doesn't apply to the bedroom...

Seriously, some well known websites will happily give you recommendations based on size of room, ceiling height etc and send you a facsimile of each so you can choose...if a certain light level at worktop height is important, they will design that for you too.
I am not saying that all of them will do this, but TLC got me a design for a workshop from the LED panel manufacturers and they were spot-on.

If I go with cool white 4000k and I find them too bright can I swap some of the bulbs at a later date for 3000k or must I have to swap all the bulbs at the same time or are these downlight bulbs even replaceable?

Depends if you go for gu10 or sealed fittings, and if the sealed fitting is cct adjustable or not.
As said above, ask your installer for recommendations on brand, type, and number of lights.

Interesting reading.

I will contact my electrician when hes back from his holiday. But Looks like I will go for gu10 lights - either warm white or cool white but dimmable.

Is there a child safe dimmer? I replaced two dimmers at home as my kids would just twist and twist the dimmer until the dial broke off.

JCC V50s are integrated fittings with a selector switch for cool or warm.
