in very simple terms if you have a very high voltage, and an air gap, (like when the switching takes place on the videos) the current will try and bridge the gap (thats the spark) this causes localized ionization of the air around it, which becomes electrically charged - or basically, conductive - of course this causes more current to flow, so eventually think whole thing just blows
