I need to install a kill switch/bang button that will kill up to six single phase circuits over three phases. Is this possible using one switch?
 
It most certainly is but the reasons why you need to do this may take you into other regulations regarding health and safety, control systems etc which are heavily regulated, a full risk assessment will first be needed long before we establish the level of protection required by the control system.
If this is simply for convenience and no risks then it is a simple solution.

As above, one way is simply to have a set of contactors with a main contact in series with each circuit.
You will then need a control circuit, and a standard "press for on" setup with a hold-in contact. The stop button then interrupts the coil supply and everything drops out.
Main downside is that you then have zero segregation of circuits in that a fault in your control circuit kills everything. And as Darkwood says, if this is for a safety system then there are likely to be many other issues you need to consider.

Yes with a proviso that the installation is altered to suit this method.
 
Reminds me of a job I had employed at the RAF base in Fife. There had been a fire when someone was cooking, so every electric cooker in the accommodation blocks was disconnected.

Then there was a period of going round adding a bank of NC contactors to every block so that the cookers would disconnect if the fire alarm sounded.

It was 6 months after the job finished that we found out that the original fire actually took place in the fire services building.
