What size supply do you have in the house? if only single phase then you'll have to apply to DNO to connect more than 16a (3.68kW). If you have 3 ph then you'll be ok.
The DNO may let you connect 8kw on single phase without any upgrade works, if not then you'll have to pay for upgrades (poa with DNO)

I won’t have any shading issues on the garage 3kw system.
The house will have shading issues (this time of year) if I use the on the long roof at the back (chimney on the back was removed last week), see attached photo taken at the weekend @11:45am
But won’t have any on the side of my the trees on that side are toy trees only 15ft high, but can only fit 2.5kw system.
I’m thinking that if I use the garage 3kw with string inverter in the garage. Use the side of the house 2.5kw and maybe the top of the back roof for another 1-1.5kw as it won’t have shading issues that high.
PMSL, there was a chimney there which we had removed last week for the panels, the conservatory was all ready there when we moved in and will be replaced but as it not causing any issues at the moment, it can stay as we just had all the windows doors and guttering replaced.
I rather pay for new panels
It was the ariel cable and guttering / downspout that I was actually alluding to, the cable should have been sorted when the chimney was done.
Is is simple enough to get a proper shading analysis done on site, either using a Solar Shading Meter with the MCS Overlay or, better still 3D modelling in PVSol, - the better installer is more likely to use the latter to give you a real analysis and they can do an animation of the effects to bak up their recommendations.
We would only supply from these inverter manufatcurers:
SMA (string)
Power-one (string and Micro)
Enphase (micro)
SolarEdge (inverter and optimisers)
Panel choice is a bit wider depending upon budget and aesthetics.

They have all said if I just put a 3kw system on the roof, it would avoid the shading at the bottom.
as for the panels I would like them to be all black giving good performance. I would like the Sunpower 327 but they just cost too much

Could go for the Benq 325's same cell as the Sunpower's - we find that the economics adds up as the other costs are the same as for a smaller system and it's only an incremental panel cost.
Other costs: Design, paperwork, scaffold, AC cabling, DC Cabling, inverter, labour, mounting, insurance, QMS, are the same (well inverter may be ÂŁ100 more..)
