What reference method would you guys put for standard house wiring (T&E through loft/underfloor/chased in walls behind capping)

Forgive my ignorance but what is the 100's club? Is it like club 18-30 but for (very old) pensioners?
The first half of the above question is serious btw

As the others have already said, it's the 100 series of installation method on page 67 of the OSG. Basically, if you immerse the cable in insulation, you can HALF the ccc!
Most of my methods are "B", as I tend to put everything in conduit and bring it through insulation.

Also would I put 101/102 etc on the cert as opposed to A B or C for a cable in insulation?

As others say, if you have more than one install method along a circuit always go with the one with the lowest current-carrying-capacity for the cable you're using.

Yes mate, that's correct. In reality, the R1+R2 will probably be slightly higher on your test sheet as there will no doubt be a spur or 2 and we have to record the highest reading.
As others have said, worst case on ref method. Think of it as the weakest link :)
