I have this PM156 pressure mat 25V/0.25A and I want to make it operate a low voltage light by switching off the light when pressure applied, I will need to reverse the polarity, does anyone have any ideas?

The connections are a normally open switch and a tamper loop, so a simple circuit with a power supply and a lamp would make the lamp light when pressure applied, not switch off when pressure applied.
You can use a normally closed relay to get what you require, or a simple transistor switch, or, if the light is a LED supplied by a series resistance, you can extinguish the LED by connecting the switch directly across it and shorting it out.
