Hi there,

We've just had a painter round, and to make space for his brush he was nice enough to disconnect our phone socket and leave without re-assembling. Could someone advise us where these cables should go?

Pic 1 is cable and Pic 2 is socket.

The "socket" you picture is a connector block.
The wiring colours used are not the conventional colour arrangement so it is not possible to identify the correct wires from the picture.
Of the orange blue and green connected into the terminal block already one should be -50V and another 0V.
On the telephone socket that the other cable goes to check which colour wire goes to terminal 2 (this should connect to the -50V terminal in the above terminal block.), which colour wire goes to terminal 5 (this should connect to the 0V terminal in the above terminal block.), which colour wire goes to terminal 3 (this should connect to the remaining used terminal in the above terminal block.) The wire is inserted over the existing wire using a punch down tool.
 
Yes as above have a look behind the phone socket point and see what cables are connected normally blue white and white blue are used as the phone line but which terminals they connect at that junction box is any ones guess , but without a punch down tool you will strugle to get a connection
