Swapped the turkey for a leg of lamb this year. Was truly delicious. Won't be going back to those bloated, flavourless, dry wastes of money in a rush.

how come in america every portion is so big?

for stuffed turkeys i always recommend roasting them in a baking /roasting bag. and doing it slowly (at 275 degrees Fahrenheit (135 Celsius) about 10 hours and raise temp to 500 Fahrenheit (260 Celsius) for the last hour to brown it basting it about every 10 minutes
should come out moist enough to just about fall apart
 
Wife and kids have gone up the coast for a week and I decided to make a chili con carne with the leftover mound of turkey that was blocking up an entire shelf of my fridge. Turned out damn nice as well, might do it next year for Christmas dinner instead of just carved meat.
