Mark, you can not use a 12v stat to switch 230v. You are giving me the impression that you do not have the electrical competence/understanding so please don't proceed further others on here maybe not so diplomatic.
 
the new thermostat i have is 230v,

The wires that came out of my old stat, the electrician (who fitted my nest) says is 230v so i used a 12v to power my nest for my radiators and heating the water,

I planned to use the wires that came out of my old stat ( see photo)
to power my new UFH stat,
 
The underfloor controller will come with a probe for putting in the floor, within the controller is the room temperature sensor, no need for another thermostat.

The controller can be set to turn the heating mats on or off depending on either the floor temperature or room temperature.
 
So i understand Blue is (N) Brown (L) Green (E)
But not being an electrician,
i haven't a clue about these Grey / Brown / Black / Green(E) on where they go into my controller,

I understand 3 + 4 are the Brown and blue on my mat,
and 6 & 7 are the floor sensor,
1 + 2 i am stuck on

Is this what you want to fit? What has a nest got to do with this UFH?. For what you have posted above ( post 23) I recommend getting an electrician in or to check it.
1 and 2 at a good guess are live and neutral supply into the stat but you would have to post the installation instructions up. This three core and earth where does it go to?

The forum has a reasonably strict 'no step by step guides' policy.

The reason for this is simple... safety. By your own admission, you are not an electrician and your questions indicate you have neither the understanding or equipment to carry out this work safely.

The best advice the forum as a whole can give you is to engage the services of a local electrician, preferably one who comes recommended from family and friends. The installation of electric underfloor heating requires various tests to be carried out to ensure the installation is safe, you clearly are no in a position to carry out those tests, so please stop and engage an electrician.
