I haven't installed it, don't worry.

I bougt this ceiling light that came with a metal housing and no ceiling rose. The only thing in there was this plastic junction box for the L/N wires.

Means I'll have to use some Wago connectors to make up for the ceiling rose. But what about ground?

Despite having a metal housing, fittings can still be 'double insulated' meaning no earth connection required.
There may be earth conductors in the ceiling rose that should be maintained and connected together but not to the light fitting itself.
If double insulated there should a symbol 'square within a square' to indicate its status (Class 2 being double insulated)
 
If that part is metal you can't put the existing wiring and connectors within it as it would compromise the Class II.
 
The terminal block shown with L & N is in a white plastic enclosure which provides the double insulation. You would have to do the same with any further connections within the metal enclosure or if taken above ceiling level as per #5 (ie wago plus enclosure)
 
No that is a complete bodge which someone has posted in the comments. That person should not be posting electrical advice on YouTube.
 
Totally non compliant in the YouTube, but the new fitting in that is not double insulated. That would have been compliant if the Wagos had been tucked into the base of the lamp, where there appears to be plenty of room.

I’m sure there are some who do it on purpose to get more hits on YouTube, even though it makes you look like a complete knob 🤣
 
Thanks. Yeah that video did look a bit dodgy, how he stuffed the wires into the ceiling. So if I turn the existing ceiling rose into couple of Wago connections and put them in an enclosure, I should be good with either putting it above the ceiling or inside the light base (that base is pretty huge) right?

The fitting in the vid has provision for an earth wire, so there's no problem with putting unenclosed Wagos inside the base. Your fitting is metal, but is 'double insulated' and has no earth connection, so any Wagos placed inside the base would need to have their own insulated enclosure.
