I don't think there is a (second) digital output (for aerial cable) from a Sky box, just analogue. (I'm using a similar setup and have to put up with a poor picture)

Unlikely, as the Sky dish is designed to receive very low signals, it could block the PIR picking up anything in the line of site of the PIR (as in behind the dish).

It looks like the telephone is running over data cabling (it's known as "structured" cabling) wiring all the points in the same cable gives you the flexibility to use a computer or phone in any location that has a point.
