What do sparkys on here tend to use for rewiring 2/3/4 Bedroom houses? My first employer swore by 1.5 but my previous would only use 1.0?

depends on the method used Tel....if method C (clipped direct)...then upto 16A..for 1.5:19.5Aif lighting is split between floors, and no delboy chandeliers, then 1.0mm is adequate. 6A MCB for each circuit.
I use 1mm when using down lighters with LEDs as it is slightly easier to use. As said earlier 6amp mcb for these circuits. Table 4D1A states current carrying capacity for 1mm of 11A for single phase 2cable with 1.5mm 14.5A for the same.
he would only do that if crap LEDs had been fitted in the first place.what about when customer stops buying led lamps and reverts back to 50w halogen in the spotlights
Not if covered on 4 sides with 6ft of insulation in roof space!Cable still ok for 6Amp MCB...
I now install 1.5mm as there is so much insulation, even between floors, and especially in the loft space. Downstairs tend to have numerous downlights fitted, and even if we do not install them they may be fitted later, so the infrastructure has to be there.what about when customer stops buying led lamps and reverts back to 50w halogen in the spotlights
