I am going to install a log burner in an open plan kitchen breakfast room. I think the Belling cooker hood, on it's highest setting, is extracting too much air. Setting 1 and 2 seem to be ok. To satisfy my burner fitter, is it possible to disable setting 3 on the hood. If so, how is it done. Thanks.

You will need to look at the switch and motor.
The chances are it will have 4 wires, one for the Neutral and 3 for the various speeds.
A picture, maybe of help.
