the projectile is going so fast and creating so much heat from air friction that together, these two heating sources heat the air to the point where it ionizes and becomes a plasma. Normally the only thing we see that can heat air to a plasma is combustion. In this case, there is "fire," in a sense, but the energy is coming from friction and resistance

No idea exactly, but if the projectile is coming out as fast as they state, I would imagine the air around is subject to some immense forces.
Did you know for example that the mantis shrimp can move its claws that fast when stunning its prey, that the water around it boils instantaneously ?
