Pricing A Job

A builder has rang me up to price up a job and it's a massive commercial job, how do people go about pricing jobs up? Do you do it per item? Or on day rate? Also what is the going day rate?

For most jobs I price materials + labour. I do however work for a builder who likes
Me to price per point which I don't mind doing.

I usually do it both ways and then see how much difference there is between the two and make a decision from there.
