I understand this could be because there is no bonding, but just want to know how it’s possible for the pipework/sink to become live?? Is it through a fault on another circuit finding it’s way to the pipework?

Other way round.
There is probably a fault on the oven that is not eathing via the oven circuit earth.
When you touch the sink, you and the water pipework are providing the earth path.
Get it looked at pronto.

True, but it might still happen if the MET is not connected and the oven-sink touch is the only place leakage gets to flow.I would also isolate the power to the oven by switching the breaker off / removing the fuse in the consumer unit / fuse box, until an electrican has been to check out the fault
