I'm not an expert, but I'd be surprised if a car alternator will work properly if directly supplying only two DC-DC converters without at least a small capacity battery connected to the output. I would expect the system to be unstable. Do let us know how you get on.
Hmm. Looks like you might have to dismantle the connector body if you want to access the contacts. Likely to be some sort of snap fit to prise open. I also think that they may be IDCs, insulation displacement contacts, similar to Krone or Scotchlok.

I agree that it's a personal decision. I do, for example, have buildings and contents cover. It's reasonably priced and covers the event of the house burning to the ground. I don't, however, add accidental cover for contents, as I don't regard it as good value.
